These vegan waffles are made with such simple, nutrient dense ingredients and are naturally sweetened from just bananas. They are low in fat and contain a significant amount of protein (10.6 grams) and fiber (15 grams) from the buckwheat flour and bananas.

Ingredients:
2 mashed bananas
1/2 cup buckwheat flour
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon baking soda
2 teaspoons apple cider vinegar
2 tablespoons water or nondairy milk
Instructions:
- Preheat waffle maker.
- Mash the bananas in a bowl.
- Add in all other ingredients and stir until well combined.
- Add the batter to the waffle maker and cook according to manufacturer instructions. You may add nonstick spray to the waffle maker if you wish. I find that the waffles stick to the iron a little without spray, but can still be taken out without much trouble. They are delicious plain, but can also be topped with foods such as maple syrup, fruit, nuts/seeds, coconut flakes, and cacao nibs.
