Banana Buckwheat Waffle Recipe

These vegan waffles are made with such simple, nutrient dense ingredients and are naturally sweetened from just bananas. They are low in fat and contain a significant amount of protein (10.6 grams) and fiber (15 grams) from the buckwheat flour and bananas.

Ingredients:

2 mashed bananas

1/2 cup buckwheat flour

1 teaspoon cinnamon

1 teaspoon vanilla extract

1/2 teaspoon baking soda

2 teaspoons apple cider vinegar

2 tablespoons water or nondairy milk

Instructions:

  1. Preheat waffle maker.
  2. Mash the bananas in a bowl.
  3. Add in all other ingredients and stir until well combined.
  4. Add the batter to the waffle maker and cook according to manufacturer instructions. You may add nonstick spray to the waffle maker if you wish. I find that the waffles stick to the iron a little without spray, but can still be taken out without much trouble. They are delicious plain, but can also be topped with foods such as maple syrup, fruit, nuts/seeds, coconut flakes, and cacao nibs.

*These waffles can also be made into pancakes
